Kosrae Village Bread Recipe

By special request, here is our famous bread recipe!

Bread behaves very differently in different climates, I would reduce this recipe by half or even a quarter and experiment. You might need more or less flour, longer or shorter baking times, etc.

Experiment with different grains and seasonings, but don’t overdo the grains or the bread will be very heavy.

Kosrae Village *Fantastic* Bread bake at 375 for about 30 – 35 minutes
1-> 6 cups water– heat to 100 degrees
2-> Check water temp, add honey and yeast

  • -> 6 tablespoons honey
  • -> 3 tablespoons yeast

3-> After yeast bubbles, add:

  • -> 6 tablespoons of oil
  • -> 1 cup cooked brown rice, oatmeal or other cooked grain
  • -> 6 teaspoons of salt
  • -> 1 tablespoon basil
  • -> 1 tablespoon oregano
  • -> 14 – 15 cups of flour

4-> Knead until bread is elastic, rub oil in a large bowl and on top of bread, put bread in bowl, cover and let rise in a warm place until double in size
5-> Turn bread out on counter, let rest, portion (we would make about 6 loaves)
6-> Form, place in pans, let raise, bake
7-> Remove from pans as soon as the loaves come out of the oven, let it cool before you slice it :)

    Katrina,

    I visited Micronesia back in January 2002, and my stay with you has always brought back special memories! I am working with our local 4H group on the International Fair project, and I choose Micronesia for our country! The kids are absolutely loving learning about the country and the culture! I started a blog for the kids to post to about their learning experiences. I was wondering if you could help us out with a few things or maybe point us in the right direction…

    For our projects……We want to weave baskets, but I have not been able to fine info on line on Micronesia basket weaving techniques. We also want to create some traditional dishes….breadfruit, taro and fish…..I was wondering if you had any traditional recipes you could share? Lastly are they any resources for traditional music they we could buy and download.

    I hope all is well with you and Bruce, and again thanks for my fond memories of Micronesia!
