Ok, here is another of those sought after Kosrae Village recipes.

This recipe is for our signature “Creamy Lime” dressing. This may be difficult to reproduce outside of Kosrae as the lime juice is from the unique Kosrae limes.


Creamy Lime Dressing

  • 1-> Process for 15 seconds in blender or food processor
    3 teaspoons lime juice
    1 egg
    ¼ teaspoon mustard

    2-> Add 1 cup oil (canola or very mild olive oil) very slowly to the spinning blender

    3-> After the dressing is thick, slowly add
    1 dill pickle (we make our own, but any good dill pickle will work)
    ¼ teaspoon salt
    ¼ teaspoon white pepper
    1 tablespoon local hot sauce (crushed hot peppers and lime juice, adjust to your taste)

This dressing is terrific on salad, fish, potatoes, you name it.

    Is there any history behind this dish? or behind the Limes itself. Like is it popular in kosrae, etc. Please let me know its for a project for my class. Thank you!

      Hi,

      We created the lime dressing when we first opened the restaurant, we wanted a dressing the would work equally well with fish and vegetables and I think that we were very successful. It is popular here and so are the limes!

      I’m not sure when limes were introduced to the island, but I think that they are a unique and probably old variety.

          Hi Feti,

          Sorry for the slow response, we didn’t have internet access for a couple of days. The Creamy Lime Dressing was created in the Kosrae Village Inum Restaurant in 1995. The owners are Madison Nena, Bruce Brandt and myself.

    Ok, thank you! so the name of the restaurant is “Kosrae Village Inum Restaurant,” correct? And one last question, do you know how to say “enjoy” or “enjoy your meal” in kosraen?

      Hi,

      Yes Kosrae Village Inum Restaurant is correct.

      Enjoy your meal is a fairly long statement in Kosraean. It would be “finsrak kom insewowo nuke me kasru”. Roughly translated this is “I hope that you enjoy the table” (meaning everything on the table).
